A trading hall is a row of villagers, each in its own cell with a workstation, so you can trade with all of them without them wandering. Here is what actually matters.
Professions come from workstations
An unemployed villager takes the profession of the nearest unclaimed workstation: lectern for librarian, composter for farmer, grindstone for weaponsmith, and so on. Nitwits (green robes) never take a job.
Rerolling trades before you lock them
Until you trade with a villager, its profession is not locked. If a librarian's first enchanted book is not the one you want, break the lectern and place it again; the villager loses its profession and takes it back with a new set of trades. Repeat until you get Mending or whatever you need. The moment you complete one trade, it is locked for good.
Keeping them supplied
Villagers restock at their own workstation, up to twice a day in Java Edition, during working hours. A villager that cannot reach its workstation will not restock. Put the workstation in the cell, within reach.
The curing discount
Curing a zombie villager makes it permanently cheaper for the player who cured it. Throw a Splash Potion of Weakness at the zombie villager, then use a Golden Apple on it, and wait for it to finish shaking. Keep it out of sunlight while it converts. In Java Edition, since version 1.20.2, curing the same villager again no longer stacks the discount, so a single cure is enough.
Java and Bedrock differ
Trading details, restock rules and some trade tables differ between Java and Bedrock. Say which edition and version you are on when you ask a question here, or the answers will contradict each other.
